Raw Chocolate Protein Cake Pops

Makes 12-15 cake pops

1/2 cup of cashews
1/3 cup of almond meal
1/2 cup of almonds
2 tbsp of @happywayau vegan chocolate protein powder
2 tbsp of raw cacao powder
1/3 cup of pitted dates
1 tsp of vanilla paste
4 tbsp of water
1 tbsp of coconut oil
Pinch of salt

Chocolate coating:
1/2 cup of coconut oil
1/3 cup of cacao
2 tbsp of maple syrup 
Pinch of salt

1. Mix all the cake filling ingredients together in a food processor starting with the nuts and finishing with the water. Adding less or more if required.
2. Once finely processed, roll balls of the size of table tennis balls with your hands and poke a skewer in each of them.
3. Place them in the freezer to set for 15 minutes. 
4. Make the chocolate coating by mixing the ingredients in a bowl and dip each cake pop in it coating all or part of the cake pop. Dip in desiccated coconut or nuts before the coating sets. 
5. Place the cake pops in the fridge in a jar to set the chocolate coating.
